- Avocado Salad Dressing No. 2301 Yields 1 Cup

- 1 Ripe Avocado 1 tsp Dijon Mustard
- 1 Tbls Lemon Juice - Salt
- 1 Tbls White Wine Vinegar - Pepper
- 2 tsp Mild Salsa

- Cut the avocado in half.
- Remove the pit.
- Peel.
- Put the avocado pulp in a food processor along with the lemon juice, vinegar,
- salsa and mustard.
- Blend to a smooth, creamy texture.
- Season with salt and pepper.
- Scoop into a storage jar.
- Chill before serving.
- Stir to blend before serving.

- Creamy French Dressing No. 349 Yields 1 Cup

- 1/2 cup yogurt, plain 1 clove garlic, crushed
- 2 1/2 tbls ketchup 1/4 tsp sugar
- 2 tbls water black pepper, freshly
- 1 1/2 tbls cider vinegar ground to taste
- 1 tbls mayonnaise

- Mix all the ingredients together in a small bowl or jar.

- Creamy Green Goddess Dressing No. 632 Yields 1 Cup

- 3/4 Cup Plain Yogurt 1/4 tsp Garlic, Minced
- 1/4 Cup Mayonnaise 1/4 tsp Salt
- 3/4 tsp Tarragon Leaves 1/4 tsp Dry Mustard
- 3 Tbls Parsley, Chopped 2 tsp Lemon Juice
- 1 1/2 Tbls Chives, Chopped
- 2 tsp Anchovy Paste

- Use a blender to combine and thoroughly blend the ingredients.
- Blend for several minutes, cover and chill.

- Fruit Salad Dressing No. 351 Yields 2 Servings

- 1 cup yogurt, plain 1/2 tsp celery seeds
- 2 tbls orange juice - salt to taste
- 1 1/2 tbls honey - black pepper, freshly
- 1 tbls lemon juice, fresh ground to taste
- 1 tsp poppy seeds, and/or

- Combine all the dressing ingredients in a small bowl or jar and whisk or
- shake well.

- Sweet n' Sour Salad Dressing No. 2300 Yields 1 Cup

- 6 Tbls Vegetable Oil 1 tsp Coriander, Dried
- 4 Tbls Wine Vinegar 1/2 tsp Basil, Dried
- 4 Tbls Ketchup 1 tsp Paprika
- 1 tsp Garlic, Minced
- 2 tsp Honey

- Combine the ingredients in a screw-top jar.
- Cover tightly.
- Shake well.
- Chill.
- Shake again before serving.
